Kerala Style Sweet Appam

Appam (அப்பம்) is a mild sweet made on many religious days in Kerala and TN. Usually, these are deep fried in oil, however, with the invent of non-stick paniyara koodu...this job has become less messier and more diet friendly too! 

I made this recently on Krishna Janmashtami, based on inputs from my friends mom, hailing from Kerala! The snack is super easy and quick to make! Very kid and party friendly snack too! Please do provide your variations to this recipe...:-)
Sweet Appam / Kuzhi paniyaram
Ingredients:

- 3 tbsp all purpose or maida flour
- 3 tbsp wheat flour
- 1 1/2 tbsp rice flour
- one small banana or half of a large banana
- 2 cubes or 2 tbsp of jaggery dissolved in 1 cup water
- 1/4 tsp elaichi powder
- 1 tsp of finely chopped coconut

Prep time: 20 mins       Cook time: 7 to 10 mins per serving

Preparation:

- Soak the jaggery in 1 cup water for 15 mins and let it dissolve.
- Once the jaggery is fully dissolved, filter it for impurities.

- In a bowl, mix the 3 flours, add elaichi, coconut and mash the banana with the flour.

- Now, slowly add the jaggery water and make it into a smooth mixture. If you prefer extra sweet, add some sugar as per choice.
- Let the consistency be a little thicker than Idli batter.

- Heat the "Paniyara Koodu" and add 1/4 tsp ghee in each of the holes.

- Pour in spoonful of the batter into each of the holes and cook on low flame for 3 to 4 mins before turning it over.

- Turn over and cook for 2 mins before removing from the pan.

- Tasty appam is ready to eat!

  2. next time u go to India....remember to shop for it...comes in handy when u hv left over idli batter...u can make spicy paniyaram with that!

  3. With enthu I bought that pan from Amazon and tried to make it today and it flopped big time :( got all stuck to the pan :(

  4. Ooohh...thats really bad...this proportion worked perfect for me! Probably, the water became little extra o the jaggery?! Try using the PAM cooking spray before pouring in the batter! I don;t see any other reason for it to fail...:-)...I feel so sorry...

  5. actually inspite of the flop, the taste of the unstuck part is pretty good:) I think it might be that vessel, it needs to be used a couple of times! But I'll try it again.
    Btw you guys okay after Irene ? forgot to ask.
